Power up your weekend morning with these protein packed pancakes.
- 2 cups rolled oats
- 2 scoops fermented Vegan proteins+
- 1 cup non-dairy milk (more if mixture is too try)
- 1 Tbsp ground flax seed
- 1 Tbsp coconut oil, melted + more for pan
- ½ tsp baking powder
- ½ tsp vanilla extract
- ¼ tsp salt
- ¼ tsp cinnamon
Put all ingredients except blueberries in a blender. Blend on high until mixture is just smooth and the texture of pancake batter.
Heat a large skillet over medium heat. Grease well with coconut oil.
Add a large dollop of batter to the pan. Drop a few blueberries into the batter. Fry for 2-3 minutes until bubbles have formed on the top and underside is golden. Flip
