Green Magic Dip

Green dip
  • 3 cups firmly packed spinach
  • 8 0z. regular/firm tofu, cut in 4-6 chunks
  • 2 tbsp chopped fresh parsley
  • 2 tsp tamari soy sauce
  • ½ – 1 tsp finely chopped raw onion
  • 1 tsp dill weed
  • 1 tsp basil
  • ½ tsp paprika
  • ¼ tsp oregano
  • ¼ tsp thyme
  • several dashes sea kelp and cayenne
  • 1-2 tsp greens+
  • ½ cup water chestnuts or mung bean sprouts, chopped
  • 1 small red pepper, chopped
  • ¼ cup sliced black olives (optional)

Steam the green vegetables for 4 minutes. Add tofu and steam for another 6-8 minutes. Place the vegetables, tofu and all but the last 3 ingredients in food processor, blend until smooth. Steam water chestnuts or mung beans for 4-5 minutes. Mix them along with the red pepper, olives and vegetable/tofu mixture. Serve with raw or steamed vegetables. Keeps 1-2 days refrigerated. Do not freeze
