Green-Powered Gingerbread Men

Ingredients:

  • 14 Pitted dates
  • 1/4 Cup coconut sugar
  • 1 1/4 Cup oat flour
  • 3 Tsp. lemon juice
  • 2 Tsp. fresh ginger, grated
  • 1 Tsp. baking powder
  • 1/2 Tsp. baking soda
  • 1/4 Cup molasses
  • 1-2 Scoops fermented whole body NUTRITION with greens+, unflavoured
  • 1/2 Tsp. cinnamon, ground

 

Decoration (optional):

  • 1 Cup of icing sugar
  • 1 Tbsp. of water
  • Sprinkles (optional)

 

 

  1. Put all ingredients in a food processor and process until it forms a sticky dough.
  2. Shape into a ball, wrap with plastic wrap, and refrigerate 8 hours or more.
  3. Line a baking sheet with parchment paper and preheat the oven to 350 degrees F.
  4. Flour the rolling surface and then roll out the dough until a 1/4-inch thickness.
  5. Cut out with a cookie cutter.  Bake for 14 minutes.
  6. Let the gingerbread men cool before removing from the pan and decorating.
  7. Mix the icing sugar and water. Pipe onto the cookies to decorate. Add sprinkles if desired before icing hardens.
