Pumpkin Pie Bars Recipe

  • 1/2 cup quick cooking oats
  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup coconut oil
  • 2 cups almond milk
  • 1.5 tsp cinnamon
  • 1 tsp nutmeg
  • 1/2 tsp salt
  • 2 cups pumpkin puree
  • 5 scoops fermented vegan proteins+ natural vanilla
  • 3 organic eggs


Preheat oven to 250F. Combine dry base ingredients and then mix in coconut oil until mixture is crumbly Transfer to a 9×13 pan and press down. Place in oven and bake for 12 minutes. In the meantime bring milk to a boil with spices and salt. As soon as it boils, transfer to a large mixing bowl and stir in pumpkin,  fermented vegan proteins+ and eggs. Taste, and further sweeten with maple syrup if necessary. Once base is cooked, add pumpkin filling and place back in over for 20 minutes further. Serve cold, topped with pumpkin seeds. Store in refrigerator.
