Tru Veggie Loaf

Tru-Veggie-Loaf

Preheat oven 350

Bring to boil 1 cup water

Add ½ cup Tru Roots Rice & Quinoa blend

Simmer for 15 mins and cool

 

In separate bowl mix:

2 cups chopped brown button mushrooms

2 cups prewashed Power Greens (baby spinach, baby chard, baby kale)

1 scoop greens+ O unflavoured

½ cup finely chopped onion

¼ cup finely chopped parsley

1 stalk finely chopped celery

 

In separate bowl mix well together:

2 cups mashed cooked Bean Medley (assorted beans)

½ cup coarsely chopped pumpkin seeds

¼ cup sunflower seeds

1/3 cup nutritional yeast

¼ cup liquid aminos

¼ cup olive oil

1 teaspoon Liquid omega3 orange

4 eggs

¼ cup potato flour

3 tablespoon dried tarragon

1 teaspoon cumin

1 teaspoon garlic salt

Add prepared rice blend and chopped vegetables

Place into well oiled (coconut oil) loaf pan and bake for 45 mins. Serve on top of lightly steamed black kale (or other leafy greens). Garnish with chopped parsley and a few dashes of liquid aminos. Enjoy!
